Siete Foods is leading the grain-free revolution in Mexican cuisine with their gluten-free tortillas and chips. The Garza family started the healthy food company in 2014 when sister Veronica (Vero) Garza was diagnosed with several autoimmune conditions. After researching the effects that nutrition could have on these conditions, Roberto Garza suggested that she try removing grains from her diet. The rest of the family decided to try the grain-free lifestyle in support of Vero.

To all their amazement, everyone’s health improved. Living grain free wasn’t easy. Saying “no” to foods rooted in their culture was a painful task. Vero began experimenting in the kitchen with alternative ingredients, trying to find a way for the Garzas to enjoy traditional foods without sacrificing any flavor or sentimentality. Then came the real test: Grandma’s seal of approval. When Grandma Campos said that Vero's almond flour tortillas tasted better than her revered recipe for flour tortillas, we realized we had something special.

Siete Foods has a variety of grain-free recipes that are easy to make and pair perfectly with the Familiar Bowl. Below you can find a quick and easy week night arroz con pollo recipe that you can enjoy in your Familiar Bowl with the whole familia.

Arroz con Pollo Recipe

Ingredients 
  • 1/4 cup extra-virgin olive oil 
  • 2 1/2 tsp sea salt 
  • 1 tsp garlic powder 
  • 1/2 tsp ground coriander 
  • 1/2 tsp dried oregano leaves 
  • 1/2 tsp ground cumin 
  • Pinch of ground paprika 
  • 2 1/2 pounds boneless, skinless chicken thighs 
  • 1 large onion, diced 
  • 4 garlic cloves, chopped 
  • 1 1/2 cups long-grain white rice, thoroughly rinsed and drained 
  • 2 1/2 cups chicken broth 
  • 3/4 cup tomato sauce 
  • 1 cup frozen peas and carrots mix, thawed 
  • 1/2 cup chopped fresh cilantro, for serving 
  • 2 limes, quartered, for serving 
Instructions
  1. In a large bowl, whisk together 3 tablespoons of olive oil, 1 tsp of salt, garlic powder, coriander, oregano, cumin, and paprika. Add chicken and toss to coat. Set aside. 
  2. Preheat the oven to 350 F.
  3. In a large high-sided, oven-safe skillet over medium-high heat, heat the remaining 1 tablespoon of olive oil. Sear the chicken thighs for 3 to 5 minutes per side, until golden and starting to crisp around the edges. Transfer the chicken to a plate and set aside.
  4. In the same pan over medium-high heat, add onion, garlic, and 1/2 tsp of remaining salt and cook, stirring, until the onion is translucent, 3 to 5 minutes. Stir in the rice and cook until fragrant, about 1 minute. Add broth, tomato sauce, and remaining 1 tsp of salt and bring the mixture to a boil. Remove pan from heat.
  5. Nestle the chicken thighs on top of the rice mixture. Clever the pan and carefully transfer to the oven. Bake for 40 minutes, or until the rice and chicken are cooked through.
  6. Transfer the chicken thighs to a plate. Fluff the rice and stir in the peas and carrots. Use a fork to shred the chicken thighs. Add the shredded chicken back to the pan, toss with the rice, and garnish with the cilantro and lime wedges.
